Cutting carbs can be a challenge when it comes to 'but what do I have instead of Noodles/Rice/Potatoes etc?'
Low carb sides are delicious, easy to make and soon fill the gap on your plate which would previously have been occupied by Pasta, Rice or Potatoes. All you may need are a few extra gadgets and ingredients.
Low Carb Noodles
Easy to make, but you will need a Spiraliser if you dont have one already. An inexpensive and crucial tool for a low carb diet. Mine looks like this; it reminds me of the old Play-Dough machines...Push something in one end, and it comes out the other in a variety of shapes and sizes!
For this recipe all you will need is:
One courgette per person
Salt and black pepper
Butter or walnut/olive Oil
Basil or parsley (or both!)
Parmesan cheese or vegan alternative (optional)
Method:
Spiralise the courgettes, creating wonderful soft green noodles!
Place in a colander, sprinkle with salt and leave to drain. This is important, if you don't allow the water to drain from the courgette, you will just end up with a soggy mess!
Allow 30 minutes, perfect whilst you prepare your main dish.
Then wipe dry with some kitchen towel.
What you do with them next depends on your main recipe; you can either stir into a dish, such as a stir-fry. Or, if serving as a side vegetable, saute in butter or steam briefly, add basil or parsley, season and top with cheese and/or oil.
How simple is that?!
Don't be afraid to experiment with herbs and oils, flavour to compliment your meal.
