Healthy Xmas 'Rocher's'

If you save the golden wrappers from the 'other' variety, people will never know and these little beauties (unlike their processed cousins) are dairy-free, soy-free, sugar-free, AND gluten-free!

They're also packed with nutrition; essential fats, fibre, vitamins, minerals and antioxidants. (Unlike the 'other' ones which deplete your reserves of vitamin C and B Vits)

So easy to make it's Child's play and oh so much fun in the kitchen!


Makes 12.


Ingredients:

75g Sunflower seeds

25g Sesame or Hemp seeds

30g Pumpkin seeds

175g Mix of dried fruit of choice (Dates, Figs, Prunes, Apricots, Raisins)

1 Tbsp ground Flaxseeds

2 Tbsp Raw Cacao powder

1 Tsp Vanilla extract

150g 70%+ Dark Chocolate if coating. I left a few without added chocolate for variety.






Method

  • Place the seeds in a food processor with the blade attachment and whizz until they resemble crumbs.

  • Add the mixed dried fruit and whiz again until the mix starts to clump together. Remove the lid and give the mix the pinch test to see if it sticks together easily. If it's too dry, add a little more dried fruit. (All depends on how dry the fruit is to begin with).

  • Add the cacao, flax seed powder and vanilla essence, blitz again.

  • Turn out into a bowl, and here's the messy bit.. (enlist the help of young children if you have some to hand..) take out around a tsp at a time and form into little balls, about the same size as a Walnut.

  • Place on greaseproof paper.

  • Melt the chocolate over a low heat and drizzle over the balls as desired.

  • Allow to set.

These also freeze really well and can be eaten frozen like an iced dessert...nom nom!
